An easy way to get your fiber and vitamins in one dish.  The whole wheat pasta has more fiber than traditional pasta.

Ingredients

  • 1/2 Pound
    whole wheat penne or bowtie pasta
  • 1 Tablespoon
    salt
  • 2 Tablespoons
    olive oil
  • 8 Ounces
    white mushrooms, sliced
  • 8 Ounces
    asparagus, chopped
  • 8 Ounces
    red bell pepper, seeded and chopped
  • 1/4 Cup
    Parmesan cheese, grated
  • 1/4 Cup
    fresh basil, chopped

Instructions

  1. Bring a large pot of salted water to boil. Add pasta and cook according to package directions until al dente. Drain.

  2. While the pasta is cooking, in a medium non-stick pan, heat olive oil over medium heat. Add the mushrooms and cook for about five minutes to release all the water.

  3. Add the asparagus and bell pepper and sauté for 3-4 minutes, until softened. Add cooked pasta to pan and add Parmesan cheese, stir until well combined.

  4. Transfer to a serving bowl, garnish with fresh basil and serve.
