Parsnip and Leek Soup

Instructions
Warm oil in a pot over medium heat. Add leeks and cook until soft, about 5 minutes.
Add parsnips, potato, broth, and thyme. Bring to a boil, then reduce heat and simmer 25 minutes.
Blend the soup with an immersion blender until creamy.
Season lightly with salt and pepper. Serve hot.
