Sometimes you just crave something sweet but don’t want all the extra fat, sugar and preservatives. These are easy to make and you get 1 gram of fiber per cookie.

Ingredients

  • 1/3 Cup
    brown sugar
  • 1/2 Cup
    butter, softened
  • 1/2 Teaspoon
    vanilla extract
  • 1
    egg
  • 1 Cup
    whole grain, rolled oats
  • 3/4 Cups
    whole wheat flour
  • 1/2 Teaspoon
    baking soda
  • 1/2 Cup
    dark chocolate chips

Instructions

  1. Heat oven to 350 degrees. In a large bowl, cream brown sugar and butter until well combined. Stir in vanilla and egg and mix until light and fluffy. Stir in rolled oats, whole wheat flour, baking soda and fold in chocolate chips. Onto a cookie sheet covered with a Silpat mat or foil, drop the dough by rounded tablespoons (you can also use an ice cream scooper) about 2 inches apart.
    Bake 10-12 minutes or until golden brown. Cool slightly; remove from cookie sheet to a wire rack.

    These need more moisture. They came out like oatmeal clumps but they are tasty. Dry. I would most likely try another recipe next time.

    Great snack. Easy to bake. I added extra chocolate chips for that extra chocolate flavor. I will continue to make these cookies as they are a really excellent “food item when some of my meds recommend they be taken with food.

    Easy, but leave room for spreading! Not dry at all, as the other review said (I measured carefully). Yummy when warm.
