Ingredients

  • beef steaks, rib-eye or sirloin
  • 4 Tablespoons
    olive oil
  • salt and pepper to taste
  • 1 Tablespoon
    balsamic vinegar
  • 2 Cups
    fresh baby spinach, washed and dried
  • apple (preferably tart, like Granny Smith), unpeeled and sliced
  • 4 Ounces
    Parmesan cheese, grated

Instructions

  1. Prepare steaks for grill by pouring 2 tbs olive oil and salt to taste. Grill over high heat to desired doneness, about 7 minutes per side for medium. Once cooked, place steaks on plate to rest and let juices redistribute without cutting.

  2. To make dressing, in a small bowl, whisk together balsamic vinegar, 2 tbs olive oil and salt and pepper to taste.

  3. On individual plates, stack spinach, apples and steak that have been cut diagonally. Drizzle with dressing and top with Parmesan cheese.
