Fish tacos are a lighter alternative to beef tacos and these have lots of fiber.


Ingredients

  • 1/4 Teaspoon
    salt
  • lemon, juiced
  • 2 Tablespoons
    olive oil
  • fish filets, trout or tilapia
  • 1/2 Cup
    red onion, chopped
  • 1/2 Cup
    jicama, peeled, chopped
  • 1/3 Cup
    red bell pepper, seeded and chopped
  • 2/3 Cups
    fresh cilantro, finely chopped
  • 1 Cup
    black beans, drained, rinsed
  • lime, zest and juice
  • 1 Tablespoon
    plain yogurt
  • whole wheat tortillas

Instructions

  1. In a small bowl, combine salt, lemon juice, and olive oil. Pour mixture over fish fillets and let marinate for 10 minutes.

  2. Grill fish over high heat until cooked through, about 3 minutes per side.

  3. In a separate bowl, combine onion, jicama, bell pepper, cilantro, beans, zest and juice of lime and yogurt to make a “salsa”.

  4. To make tacos, place fish in warmed tortilla and cover with “salsa” and fold in half. Serve.
