This is one of the easiest,  but flavorful one pot soup dishes.  Perfect for dinner or to take for lunch.

Ingredients

  • 1 Pound
    skinless, boneless, chicken breast, cubed
  • 2 Tablespoons
    olive oil
  • 2
    lage onions, chopped
  • 3
    garlic cloves, minced
  • 3
    carrots, chopped
  • 1
    bay leaf
  • 1 Teaspoon
    salt
  • 1 Teaspoon
    poultry seasoning
  • 8 Cups
    chicken broth
  • 1/2 Cup
    dried split peas, washed and drained
  • 1 Cup
    peas, thawed if frozen

Instructions

  1. In a large soup pot, heat olive oil over medium heat.

  2. Add chicken and cook for 5 minutes, until lightly browned. Add onions, garlic, carrots, bay leaf, salt and seasoning and cook until vegetables soften, stirring occasionally.

  3. Add broth and split peas to pot and bring to a boil. Reduce heat, cover and simmer on low heat for 30-45 minutes.

  4. To the soup, add green peas and heat for 5 minutes, stirring to combine all ingredients.
