Using turkey instead of beef, makes this a lighter version of chili.

Ingredients

  • 3 Tablespoons
    olive oil
  • garlic cloves, minced
  • onion, chopped
  • 1 Pound
    ground turkey
  • Bay leaf
  • 1 Teaspoon
    ground cumin
  • 1 Teaspoon
    dried oregano
  • tomato, seeded, chopped
  • 14 Ounces
    can tomato sauce
  • 1 Cup
    beef broth
  • 1 Teaspoon
    salt
  • 28 Ounces
    can red beans, drained and rinsed

Instructions

  1. In a large pot, heat oil over medium heat and cook garlic and onions for a 5 minutes.

  2. Increase heat to high and add turkey, bay leaf, cumin and oregano. Cook until turkey has browned, about 5-7 minutes.

  3. Add tomato, tomato sauce, broth and salt. Bring pot to a boil and then lower heat to simmer. Cover and simmer for about 20 minutes.

  4. Add beans and more water if needed, and continue to simmer for 25 more minutes. Serve.
