Chicken Florentine

Instructions
In a medium pan, heat olive oil over medium heat.
Add zucchini, onions, and chicken, stirring occasionally for 5 to 10 minutes, or until chicken is golden.
Add salt, thyme, rice and spinach. Cook and stir for another 6 - 8 minutes or until heated through and spinach wilts.
Remove from heat, transfer to a large serving bowl, and stir in cheese. Serve.

It was good, I did add one cup of chicken broth to make it more moist
